Salad is a dish contains a mixture of small pieces of food, like vegetables with sauce or salad dressing. Here is a tasty potato salad, which contains potato, bacon, egg and other spices.
Ingredients:
For the Mayonnaise –
- Large egg yolks – 2
- Red wine vinegar – 1/4 cup
- Dijon mustard – 1 tbsp.
- Kosher salt – to taste
- Vegetable oil – 1.5 cups
For the Salad –
- Small red bliss potatoes (quartered) – 2.5 pounds
- Garlic (smashed) – 3 cloves
- Kosher salt – to taste
- Bacon (chopped) – 6 slices
- Extra-virgin olive oil – 2 tbsp.
- Red Onion (diced) – 1
- Celery (diced) – 3 stalks
- Red wine vinegar – 1/2 cup
- Dijon mustard – 1/2 cup
Procedure:
- Place the egg yolks in a blender and add 1/4 tsp of salt, red wine vinegar and mustard. Blend and drizzle oil very slowly.
- To make the salad, place the potatoes in a medium-large pot over medium heat and add garlic. Add water to cover the potatoes by 2 inches. Season them with salt to taste. Then reduce the heat and simmer for about 10 minutes or until potato is fork-tender.
- Subsequently, place the bacon in a large skillet over medium-high heat with olive oil. Cook for about 10 minutes or until browned and crisp; stir occasionally.
- Stir in the onion, celery and vinegar; season with salt.
- Remove from the heat and drain the potatoes. Shift potatoes to a large mixing bowl and add the bacon-onion mixture. Stir to combine well. Add prepared 1.5 cups of mayonnaise and mustard; stir gently and season with salt.
- Keep it in refrigerator until cold.
- Serve cold or at room temperature.
If you feel like, the mayonnaise is too thick, you can add a few drops of water; but if it isn’t thick enough, then add a little more oil during the motor running.
